My favorite MATLAB Demonstration was the one on 2-D and 3-D plots. This semester I'm taking multivariable calculus so the section on 3-D plots was the most interesting in my opinion. As this class is my first exposure to functions with more than two variables, I've had some trouble visualizing what the graphs of these functions look like.
