Matlab Demo
My favorite demonstration from the Matlab examples was Earth's topography. It was interesting how images can be mapped onto 3d surfaces, and how Matlab has features like 3d lighting. This demonstration shows how simple methods like plotting data and pictures can create really cool applications.
