My favorite MATLAB demonstration was Earth's Topography. I think it really cool that you can make a map of the continents by making a contour of the points on the map that have zero altitude because all the coasts have zero altitude. I also thought it was cool how you can use different shades of green and blue to show elevation and depth, respectively.
