My favorite demonstration was by far "Viewing the Penny." I liked the creative and cool ways matlab can plot different images by determining the light and brightness of the image. The features such as pseudo-color plot and a Contour plot seems very artistic and can give a bright new viewpoint on something as ordinary as a penny.
