My favorite demonstrations under the examples tab in MatLab were Bending Truss and Minesweeper. I liked Bending Truss since the general bending pattern can be arranged by changing the modes of the truss and reflected with a 2D visual. And I enjoyed minesweeper because the code written can randomly assign the bombs in the array of squares.
