My favorite Matlab Help Demonstration is the "Viewing a Penny" example, where 4 different types of plots are used to analyze the surface of a penny.  The contour plot, pseudocolor plot, pseudocolor plot with a color map, and surface plot with a color map all show the penny in unique and interesting-looking ways.  To me, this program really reveals the power of matlab as a tool.  Just a few simple commands can reveal a detailed image of the surface contours of a penny.  Matlab's plotting functions are remarkable.  It would be awesome using functions like these on a lab.
