My favorite demonstration is on how to make and manipulate 2-D Plots on MATLAB.  This was a skill that I was not familiar at all, and it was refreshing to see all the instructions in one place.  The different plots included chirps, bar plots, stairstep plots, errorbar plots, polar plots, stem plots, and scatter plots.  I learned how to make the plots, manipulate the axes, label the axes and title, and experiment with line and marker types.

Assignment (Demonstration)
