My favorite MATLAB Demo is the demo called "Viewing a Penny," from the "Graphics" section.

This demo contains a .MAT file with the official NIST measurements of the mold used to mint the U.S. Penny. The demo's script then creates copper colored contour lines using that .MAT file, and then afterwards shades and colors in the penny with accurate respect to the height and depth of the different areas. Another lighting technique is used to make the image look like a photograph, and then the script produces a 3-D model.
