My favourite demo was the demo called "Optimal Fit Of a Non-linear Function" It shows you how to plot some of the points of data and the most importantly how matlab can draw a best-fit line that is not a linear. Even though the data forms a non-linear function, matlab can recognize this and draw a non-linear line according the specific data. It would be very useful in practical application.
