My favorite Matlab demonstration is the 2D and 3D plots. I am currently taking MATH 212 (Multivariable Calculus) and it becomes increasingly difficult to plot functions, especially 3D ones. The plot/surf functions in Matlab allow me to gain a better understanding of the function I am dealing with. A visual representation of the curve/function allows a better understanding of behavior as well as the prediction of derivatives, curvatures and maxima and minima.
