My favorite demo was the Viewing a Penny one.  It is amazing to see how a computer program can draw a penny that is so realistic off of a code saved in the program.  The file that was saved was just a string of data and from that the program was able to draw a contour map of the penny that was very precise and then was able to color that in and draw a 3D representation of it that was so realistic it looked like an actual picture of a penny.
