My favorite MATLAB demo is the 3-D Plots demo. This demo was particularly interesting to me becuase I have always found graphics particularly interesting and this demo explains how to plot surfaces in MATLAB very easily. Additionally, this demo gives a sequential approach to learning how to plot the 3-D surfaces starting with a mesh plot and progressing to a surface plot with shading.
