My favorite demonstration was Coder/Decoder.  I thought it was really awesome how quickly MATLAB could encrypt/decrypt a code.  For instance, using the code letter b (shifting all of the letters down one in the alphabet), Cassie becomes Dbttjf.  This could be used to send a secret message to another engineer and they could decrypt it and understand the message easily, while a non-engineer would be unable to or have trouble decrypting the message.
