My favorite Matlab demo was that of the Loma Prieta eartchquake. It plots accelerometer data from the 1999 earthquake based on data from UC Santa Cruz. It is a good example of plotting multiple data expressions together, and using subplots. It even shows creating a 3D view of the data.
